2 pounds spinach ready to cook
2 tablespoons olive oil
1 clove garlic
4 tablespoons parmesan cheese
Put the spinach ito a small ammount of boiling salted water and cook, uncovered, 5 minutes and cook covered 10 to 15 minutes or until is just tender.
Meanwhile, heat oil and garlic in a large skillet until garlic is lightly browned.
Drain spinach and add to skillet, turn to coat with oil. Cook 5 to 7 minutes, stirring occasionally.
Season with salt and pepper and sprinkle with parmesan cheese.
