Zeppole di San Giuseppe


Ingredients

125 grams all purpose flour
190 milliliters water
50 grams unsalted butter
3 eggs
1 pinch of salt
1 teaspoon vanilla extract
Preparation







Combine the water, butter and salt in a medium saucepan over medium heat. Bring to a boil, 


and pour all the flour


 and immediately stir.


Cook for 2 minutes thedough, stirring constantly; will be ready when it pulls away from the sides of the pan.


Transfer the dough in a bowl and let it rest until almost cold.


Then add the eggs one at a time, letting each one incorporate completely


before adding the next.


Add the vanilla extract.


Pour the dough in a pastry bag


form the zeppole on a baking sheet at 2 centimeters apart.


Bake to 375°F for 20 minutes, it will be ready when you will not see little bubbles on the surface anymore.


Let the zeppole rest until they are cold


and sprinkle them with confectioners sugar.
