1 roll of puff pastry, circular or squared
2 or 3 medium potatoes cut int small cubes
2 medium carrots cut into small cubes
3 medium zucchinis cut into small cubes
50 g of spft cheese
2 tbs of grated parmesan cheese
milk to taste
olive oil to taste
salt and pepper to taste
Heat oven to 190°.
Start cooking potatoes and carrots in a pan with hot oil stirring occasionally. after abut 10 minutes, add in the zucchinis and let the vegetables cook until they are fully cooked. Be sure to avoid letting the vegetables become mushy.
In the meantime, mix in a bowl eggs, soft cheese, grated parmesan cheese, salt and pepper and milk. Start with only 3 tablespoons of milk, if needed add in more in order to make the mixture smooth and creamy.
Once the vegetables are fully cooked, add them in the bowl with the egg and cheese mixture.
Cover a cake tin with baking paper and place in the puff pastry.
Pour the mixture in the puff pastry and decorated as pleased.
Bake for about 20 minutes or until golden.
