Paglia e fieno with cheese and sausage


250 grams tagliatelle paglia and fieno ( fresh green and white tagliatelle)
150 grams di sausage (out of casing)
olive oil
100 grams creamy cheese ( like Philadelphia cheese)
milk ( if needed)
100 grams parmesan cheese
salt and pepper

Cut the sausage in small pieces and cook it with oil, in a large pan, in a mediun heat, for about 5 minutes.

Meanwhile cook the pasta in salted boiling water until cooked ( follow the instructions on the box).
Pour 2-3 spoons of boiling pasta water in the sausage, add the Philadelphia cheese and stir. Leave over medium heat and cook for 5 more minutes.
Drain the pasta and toss it into the saucepan (that one you already used for the sausage and cheese) over medium heat, sprinkle with parmesan cheese and season with more oil, some salt and pepper.
