Veggie meatballs with zucchini and bread


Ingredients

3 cups bread crumbs + 1 cup
milk 
4 medium zucchini, shredded
2 beated  eggs
2 tablespoons parmesan cheese
salt and pepper
pinch of nutmeg
olive oil
1 tablespoon milk if need

Preparation

Soak in milk the bread (3 cups) until is soft.
Heat oil in a large skillet and add the zucchini, cook about 10 minutes. Season with salt and pepper.
Add the cooked zucchini to drained bread, pinch of nutmeg, eggs and cheese, combine all ingredients ( if need add milk). Roll into meatballs and  press them just a little and then roll in the bread crumb-
Fry in heat oil.
