18 oz ( 500 gr) cup white flour, plus more for work surface
1 envelope active dry yest
2 tablespoon olive oil, plus more for the pan
3/4 cup warm water
cold water with gas enough to combine the dough
1 teaspoon salt
In a small bowl sprinkle the yest over the warm water and add sugar, mix and let stand for about 5 minutes until foamy.
Combine in a large bowl, flour, salt, oil and mix. Add the yest and combine all ingredients until dough comes together. Turn out onto floured surface and continue to knead vigorously until it becomes elastic. Shape the dough into a ball and lightly coated with flour. Cover with a cloth and keep it in a warm place until the dough swells to twice its former size.
The dough is now ready to be punched down, made into a disk and used for pizza with any topping you wish.
