Brutti ma buoni / Ugly but good


200 grams almonds roested and grossly chopped
200 grams confectioners sugar
seeds of vanilla bean
100 grams egg white
Whisk the egg white with confectioners sugar to firm peacks, adthe chopped almonds, the vanilla seeds and slowly and gently stirring with a spoon.
Poor everything into a saucepan over a low heat, stirring continuously until it dries up, it maybe take about 10 minutes.
Line the baking sheet with parchment paper and preheat oven to 300° F.
Spoon the hot almound dought ( it help use 2 tablespoons) onto the prepared baking sheet, 2 cemtimeters apart.
Bake the cookies in the center of the oven for about 15 minutes. Turn off the oven and let the cookies rest and dry in it.
